Smoked chicken breast that's s not dry!!

Finished and looking good!

Chicken brine
8 cups water
1/8 cup salt
1/3 cup brown sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1/2 tsp thyme

Put chicken in the fridge until ready to cook. Overnight-6 hours minimum

Pull chicken from brine and pat dry

Add even coat of rub.
Chicken rub
2 tbs brown sugar
1/2 tbs salt
1/2 tbs onion powder
1/2 tbs garlic powder
1/2 tbs oregano
1/2 tbs paprika
1 tsp thyme
1 tsp black pepper

Prep the smoker

2 hours and pulled at 160 degrees to let rest for 30 minutes

Smells amazing

Great color and composition

Chicken breast turned out juicy and packed full of flavor

Add rice and asparagus to complete the meal!

You brined the chicken and then added salt to the rub? Sounds like a recipe for super salty chicken

I actually tried brining chicken breast for the first time recently and I found the flavor to be off-putting. Not sure what was up.

Brining is as much a science as it is a skill. Probably too much salt, that can hurt

The mix is hard to get for what you like for flavor. Also time it's in the brine makes a difference. Lots of experimenting to do!
