I've always wondered if there was a way to build some kind of sensor into a card that store owners could use to detect these things.
Put the card in, confirms everything is fine. Have it work like confirmation/captcha things where you input an admin code.
They have sensors on newer ATMs. Best bet is to cover your pin when you enter it.

Many of the newest models of ATM's can sense when a skimmer is placed on them and jam their signal, then notify police.

You can run the card as credit without a pin. But more likely they'll do something online.
Most of the time they also have ways of retrieving your PIN. Either through cameras, thermal imagine, or modified keypads.
