Isn't pine too soft to use as a work surface?

Soft is fine. Heavy is what matters. Southern yellow pine is plenty heavy, so it's a pretty good choice. Means the bench dents, not tools.

Pine is soft, typically the tops of these are made from something like maple. However Pine works well enough and it not nearly as exspensive

Yeah, maybe 80$ in yellow pine. It's going to live in my laundry room as I'm low on space. One day when I have room I'll splurge on Maple.

You can always lay a piece of counter top laminate on it to protect it. Would also make it a better surface for working and writing, etc.
