I'm working as a restaurant manager couple of years now and couple of things are happening almost every day and they are annoying as hell. Even if you are happy working, your staff is cool and happy, there are always these weird and annoying customers that they are going to kill completely your mood just because they think they can lie and everyone will believe them.

To start with (please don't do any of the following if you go to a restaurant), it's perfectly fine and noone will mind AT ALL if you state to your waiter that you don't like an ingredient e.g. corriander instead of pretending that you are allergic to it. If you do so, instead of us being careful not to serve this ingredient to you, we have to follow all the procedure (washing equipment, preparing everything from beginning) which will take way longer than usual and will result you waiting for NO reason at all and then complain that the food takes too long. Extra chances are that your friends will be already eating when you get your dish. Just be honest and everything will be much more faster and better.

Second one, eating gluten free food doesn't mean you are on diet. Celiac disease is an immune reaction to eating gluten, a protein found in wheat, barley and rye. If you have celiac disease, eating gluten triggers an immune response in your small intestine. By not eating gluten you avoid that. Indeed there is a gluten free diet but this is much more different than the "Oh I gained 4 kg on Christmas holidays, time to go gluten free".

I'm allergic as well but when I go out and they can't provide a lot of dishes for me I don't get upset. When you go out and you state that you are allergic to dairy, gluten, nuts and you are vegan don't be surprised and don't act like a dickhead if they can't provide a lot of food.

IF you change many ingredients, be prepared for the result. Happened a lot of times, a customer asking to remove the ingredients a,b,c and add extra d,e,f and then after he eats a bit he states "oh this doesn't taste like it tastes usually". OF COURSE IT DOESN'T. You changed the whole recipe and now you are not happy. Just don't do it. Remove one or two and it's fine. Remove more and you are ruining the recipe. And no, removing a lot of ingredients, doesn't decrease the price of it. We give you the item at that price with all the ingredient's listed as a maximum one. That means you can have them all included and you are not paying more than that. If you want to exclude one is up to you but that doesn't affect the price at all.

TL;DR Coupe of things at work are annoying and mood killing. Don't lie to your waiting staff.

In Japan I'd occasionally let people think I had allergies because my actual food restrictions were too much of a pain to explain.
