Chorizo melts when it cooks so you use that instead of oil. Chorizo first until it cooks down then add eggs or potatoes or both.

Well, the Latin American varieties. Spanish (Catalan or Castille] are hand cut and dried more similar to a salami

Yeah, I'm only familiar with the Spanish version and it is mostly meat(muscle) and fat + spices. So many versions just in Spain too.
