Put the jeans on, find where you want your jeans to lay and pin it. Easier if you can have a friend do it. Roll the jeans up so that the original hem is slightly above that mark, and pin it.
Sew right next to the original hem. You can do it by hand, but a sewing machine is MUCH better.
Cut off the excess below the hem
Without the extra fabric
Unroll and iron the hem.
