The smell of all the congealed fats and chemical cleaners that are eternally soaked into every pore of the kitchen.
You can smell it most in the morning before the ovens go on and all the normal bakery smells cover it up.

I work in a casino. Can confirm when I walk the back of house our restaurant's kitchens and bakery smell horrible before they actually open.

The trick is to run your bakery on a 26 hour schedule so there's always good smells going on
That time isn't a joke but the smells are. Idk what y'all are doing but my workplace doesn't smell cleaning supplies b/c we clean properly
