angus high choice brisket

trimmed up and ready for seasoning. secret seasonings are mayo, bolner's brisket rub and black pepper. The oil in the mayo pulls out the fat soluble flavors of the rub and the emulsifiers keep the bark from getting rock hard without wrapping

ready for the fridge

bringing up to room temp

lump, oak chunks and pecan chips

just a small water pan to help with the bark

on the pit at 225

after two hours

after 4 hours. temp bumped up to 250

after 6 hours

after 8 hours, stall is over so temp bumped up to 275

probed tender at 196

finished pic. mmmmmm, bark

wrap in butcher paper

then in foil

stash in cooler

money shot of point and flat

it sure was tender and juicy

texas style burnt ends

leftovers south texas style, enchiladas!

darkened up from the smoke

looks nasty but the runny yolk makes this the best breakfast, lunch or dinner ever

oak chunks under the coals. There's plenty of smoke, look at the burnt ends. I use the pecan chips for a subtle nutty kiss

lets the meat rest, and relax from all that heat and cool down slowly. You can keep it in the cooler for up to 6 hours but I do 2 mostly
