My first jobs were chain restaurants. Started as a busboy, then a dishwasher, and eventually became a cook. Didn't have that kind of setup for dish, but would hit the volume during dinner rushes. It was plates on to a smaller rack then into a machine after spraying them majority of crap on them off. Hated anything with melted cheese on it as it always stuck to the plates/bowls and would need to be scrubbed off and take multiple run throughs some times.

As someone who worked in a relatively small overnight truck stop restaurant, this is a pretty easy number of dishes to accumulate in a short amount of time. Shit comes in FAST.

Cruise ships have phases of dining. They usually ask when you want to dine to know how much volume to expect. They get all the dishes out fast, then folks eat, dishes come back in a huge wave. So he was prob helping with food prep and now that the wave is over he's doing the dishes to prep for next wave of dining.

That's improper loading. Expect a lot of those plates to come through without getting cleaned.
Also, loading that fast doesn't help much. That belt is going to fill up and constantly stop moving forward because no one can unload the dishes that fast (unless there's 2 people I suppose).

You can see the water coming off them each time he turns the plates verticals for loading. They have either gone through a rinse already or they did the thing I used to do as a dishwasher which is to run water down the dish tower so everything gets a pre-soak, loosen up dried on or hardened food particles.
I really don’t think they’re doing it wrong, and he’s clearly not doing it too fast, because the belt isn’t over full, or stuttering.

Fun fact, this device just throws shit in the ocean. Cruises just buy new plates for every meal, that is why the prices are so expensive. That and the lawsuits for all the mermaids they run over.

Usually not. Displacement is checked on port and there's heavy fines if you come in underweight without a reason. There are waste collection ships and trucks.
