My salvation from depression in a bowl.

I'm a war veteran who had to find a way to cope. Cooking saved my life and my sanity. I found solace in the secondhand instruction of Julia Child and Gordon Ramsay. Ramen is my ultimate comfort food. Well, right next to lurking the FP, of course. Stay lovely, Imgurians; eat something delicious.

I make a mean Chicken Tikka Masala. Time consuming to do correctly, but worth it. I'll put a recipe together for you; I mostly wing it.

A good, sharp knife and a little time and care. I usually cut the scallion in half lengthwise and spread it out flat, then finely slice it.

How do you do the eggs and broth? Been expirimenting with Ramen recently, and still working on those two.

I personally will softboil the eggs and then marinade for 12-24 hours in a mix of soy sauce and pork broth

For a pleasant variation I like to use soy sauce, lemon juice (or rice vinegar), and mirin. Reduce, then marinade the eggs. Subtly sweetsour

Sous vide for amazing eggs. Or just do it on a low heat stove like i did. Broth is an art. I do tonkatsu. Pig hock, chicken, +veggies

I do my eggs for 7 mins then marinate in soy sauce, mirin, and sake. For broth I either use Ivan Ramen's or the FoodLab tonkotsu.

Boil the eggs for 5/6 minutes, depending how big they are, then peel them under cold water so they don't cook anymore, marinate in soy sauce

ginger, spring onion and mirin for 8-12 hours in the fridge. Enjoy!

I usually take a big enough metal soup ladle and spread a drop of sesame seed oil, and cook the egg in it on top of the boiling water.

And let the water go on top when it starts cooking. Makes for a nice uncooked yolk to break in the ramen.

Broth is part dashi (Fish/Seaweed stock), part tare (reserved fat from cooking meat, plus flavorings). YouTube is your friend, like me.

Put enough water to cover your first knuckle in a saucepan. Steady boil, gently add the eggs. Cook for 6-7 minutes. Ice bath. Peel. Done.

By far the tightest and most succinct explanation I've heard. All I'd add is that letting the eggs come to room temp makes it more reliable.

Good stuff. I crack the eggs right in while the broth is still boiling. Doesn't look as pretty though.
