What's special about the material they have to be struck against?
The striking surface has phosphorus which creates the reaction with the match head. Otherwise the head is no more volatile than the wood.

They are designed to burn, not ignite. Fire will ignite them but striking them against a surface won't, just like it wouldn't ignite wood.

Probably uses an inert gas or "clean agent" system. You remove the air and replace it with gas that isn't flammable very quickly.
