So at first I was pretty excited, an email response setting up an interview in under an hour from the time I sent it? That's a pretty good sign! So I did my due diligence and start researching the place.

Low and behold, they've already been reviewed heavily by most of the major newspapers here. Ok, all of them. The reviews are glowing, the photos and descriptions help me get a feel for the places tone. It's higher up than I've ever worked before. But I recognize 75% of things, it doesn't look that crazy. Confidence boost, go me for getting this interview!

Then I remember I'm going to have to mock interview myself tonight because I not only suck at interviews, I tend to make really bad first impressions. Not so happy, crap. And all my pre-thought out answers to standard questions are just that, standard and unoriginal. Something they've heard before.

And that's will bore them. Wait, them? Is there going to be more than one person at the interview?! Coworker had a three-on-one interview a few months ago and he was terrified. He's better than me... uh oh...

At this point I've already confirmed the interview time. And I'm freaking out. So I go back to my happy place, Research-town and start looking into the chef and who the partners are. Apparently my cursory glance at the chef's CV at the beginning wasn't in-depth enough.

He was trained by one of the biggest chef's in the city, who is also a partner and both are award winning chef's. Also on the partner list are some other biggest names in the industry in the province. Fuuuuuuuuck.

And then I looked at his instagram. Apparently I'm behind the times in that my industry is does decent social networking via Twitter and Instagram. I hate social media and networking. His photos of the plates are things I've never worked before, and the plates cost more than a days salary for me... I'm fucked.

... and then the photos of major stars came out. We've gotten some relatively big name stars in over the summer at my current place, but, it's not fine dining, we don't even have plates for fucksakes, it's get-down-and-dirty type of place.... Nicolas Hoult and NPH were in the photos guys...

So this is going to be me for the next few hours, I'm too nervous to sleep anyways, researching the ever living hell out of everything on the posted menu. Hope to goddess of perfectly shaved legs that the trial shift can be held off until I can spent a few hours at home working on sashimi.

OH but wait, there's more. My brain choose this night to remind me that I'm now being groomed at my current (now) part-time job to be in charge. The sous' rough words were, 'You're in charge when I'm not around. I want all of this, everything, to be like the back of your hand. In the event that I'm not here next summer, you need to step up.'

This is how I get panic attacks. It was that last sentence that through me, 'If I'm not here next summer...' Uh?

Just breathe. In through the nose, out through the mouth. Or whatever. What was that, ohh someone texted me, yay! Nope, email.

Oh, the other fine dining place wants me to come in to see the kitchen and talk.

K, I'm not sleeping tonight.
