Meat that consistent in color from edge to center has been either cooked (steamed) in a low temp AltoSham or sous-vided then seared. So delicious-looking beef, yes. Roast beef? No. And without roasting you don't have delicious rendered beef fat to use for the yorkies.

"My beef isn't grey and gelatiney enough" is a classic British take. I bet you like your Sunday Roast served in a Tudor (or mock-Tudor) pub back room where the air is heated to one billion degrees to make up for the fact the meal is kinda tepid.

To be even far clearer - this is alot like Metric measurements - most of the world isn't encumbered by being in the US.So they can understand how to make pancakes blindfolded with one arm tied behind their back from scratch. And as a result, can cook Yorkshire puds from scratch.

I hyped it up for myself. After so much hype, I tried making it; it was okay. Went to the UK, got it three times at three different places and was consistently whelmed. It's good, quite tasty, but it is still a pastry of egg, milk and flour.
