not sure about OP but I most certainly do.
I just spend a month or more scultping, remeshing to prevent valence lighting errors, baking textures, writing materials, hand painting other stuff, and bringing it all together in a scene.
That work is the art, the render is essentially just a way to view it.

same thing. The scene is the file where I place all assets I made into a 3dsmax scene and then start the render.
Once done I keep only the final file for each asset and the final scene file where the scene and rendering was to my liking. The project, so to speak, is the actual art so I want to keep that.
Bonus now is that I can use the project files to proof it's not ai, you can see my actual work in it.
Possibly I am misunderstanding you, what files exactly do you mean by source files?

What I mean by "source files" is like all the models, textures, their arrangement in 3D space, the lighting, everything that was passed to the renderer to generate the above image. Assets, as you and indeed many others call it. And it makes sense to keep all of that for specifically the reasons you pointed out.
