And for the original, you could have made Luke the pilot, but then you wouldn't have a Jedi for either one. Meanwhile, Poe and Han are the better pilots

You could say the same of Luke in the original trilogy. Han didn't actually pilot that much if you think about it, I think it's mostly Chewie and then Lando in RotJ.
