It absolutely matters. I've made beer brats with shitty beer before and it does make a difference in the flavor. Not saying you should cook with craft beer, but a decent beer is only a few bucks more than Budweiser.

While I agree with what you're saying on some level, as someone who has cooked with beer on a number of occasions I gotta say a more flavourful beer almost always turns out better... And it's not like good beer is expensive like wine or bourbon or scotch or something anyway. I've actually cooked with budweiser & bud lite, and I've cooked with actual good flavourful microbrewed beer, the flavour imparted is almost always noticeable in a good way.

for example, make a rarebit with a budweiser, then go out and get like a sam adams or something rich like a saint ambroise oatmeal stout or something like that, compare the cheese sauce even though it has dairy/butter etc., the budweiser one will just taste 'flatter'. (2/2)

As a bloke from WI, lemme tell ya the best beer brats I can make get marinated overnight in beer + rosemary, onion, and garlic. Then use that same marinade for the above procedure, simmering the brats first and then grilling them over charcoal. Propane is fine if you have no alternative, but charcoal is preferred. Low and slow is the key to browning them. If you're going to make beer cheese don't use the marinade, or at least run it through some cheese cloth to get the herbs and aromatics out.

The only herb is rosemary and you just throw the whole stick of it in there. You don't want that in what's supposed to be a smooth cheese sauce.
