Also not good at rolling it out. Kept ripping. Sign. Back to the drawling board.

Bland suggests you might be light on salt. Wife loves to bake and bread without salt is like breathing without air - there's no point.

I still just cheat with flour+Greek yogurt and a teaspoon or so of garlic powder mushed all in before the rolling (which is never even).

Bread is tricky! I have a lot of trouble getting the right consistency when I'm kneading. Little tip: you can mix together a little slurry of water, flour, and yeast and leave it out overnight. In the morning, it will have fermented a bunch of delicious flavors, and you can mix that into your dough

Make sure the dough has enough salt, my standard is 1 gram of salt for every 50 grams of flour. Also, were you using high gluten flour or all purpose flour?

All purpose has less protein to form gluten than bread flour... but as you said, you used what you had. Just work on making the crust thinner. Otherwise, you did great.

For pizza you want slack or sticky dough. Don't keep adding flour till it gets too dry. Cover it in a bowl and store in the fridge overnight. Get it out and form the balls a couple hours before you want to roll it out. It really makes a difference.

A fast and easy way to make pizza dough tasty is to add malt vinegar and nutritional yeast. About a teaspoon of vinegar added to the water and 1/2 teaspoon of nooch to the flour. You can always add more to taste.

I got a 14" cast iron pan for doing pan pizza with sourdough. Works very well, so easy to do. And 2yr aged cheddar can be sprinkled around the crust to make a perfect crispy cheese crust!

Niiiiice. Next time try ot in a cast iron skillet. Tip, cook the dough in the skillet for just under a minute, butter between the iron and dough gives a nice crisp. Then broil for 5 minutes on the upper most rack. Perfection

The second was sausage with an Alfredo sauce. The crust was brushed with butter and herbs.
