Breakfast of champions
Potatoes cooked in bacon grease. Once they’re crispy add onion, garlic, cayenne pepper, and tony's chachere's
Take your steak out an hour before you want to cook. Season with lemon pepper, garlic powder, salt, and fresh ground pepper(coarse if available). With your steak at room temp put the cast iron pan on the burner at med-high temp, preheat your oven to 375F. Once your pan starts to smoke add avocado oil to the pan. Place your steak into the pan, crank the burner up to high once dropping the steak, searing both sides for 90 seconds. Place the whole pan into the oven for 8 minutes (1” steak). Remove the pan from the oven, use mitts as the pan will be hot, for a more rare move the steak to another pan and cover, resting for 5-10 min. For a more cooked steak let the steak rest in the cast iron.
