But for a cut that big, the ends of the meat that are a little thinner and cook a little faster might offer those who prefer more towards medium instead of rare some slices they can enjoy (currently looks to be medium-rare to me, right in between).
Although this is my preferred way of eating steak, I just lost a friend to colon cancer. The doctor said it was most likely from him eating steak rare. Which he did a lot. Even less than rare if the chef allowed. I now eat my steak medium well. Plus I rarely eat steak anymore. Fuck cancer.
