Sounds like your grandmother was from northern Germany and spoke Plattdeutsch, which is actually a distinct language and not just a dialect of German. Very cool! :)

Her grandparents were from the Upgant-Schott area as were 5 of her aunts and uncles that came to Iowa as kids. There was a large group of those speakers in NE Iowa where they settled. She used to make kale with barley and smoked pork like bacon or hocks. I recently found out that was the family's approximation of grünkohl und pinkel since they couldn't get the sausage in the US

I just had to look up where Upgant-Schott is, as I've never heard of it before, but yeah, that absolutely tracks, it's exactly where I would have expected speakers of Plattdeutsch to come from, and when your ancestors moved to the US it was much more common to speak Platt as your everyday language than it is these days.
