...did you make enough tamales? Your abuela might come from 50k miles away, you need to make a million more just in case.

9 years ago | Likes 1 Dislikes 0

Its that time of year for the white people in Texas scramble to find their local tamale lady.

9 years ago | Likes 10 Dislikes 1

Here in California, every workplace is mandated by the state to have a "tamale lady" visit to take orders in December.

9 years ago | Likes 2 Dislikes 0

Or black people in Mississippi...

I learned from Alton Brown that somewhere further down into Latin America they make tamales with banana leaves, but I can't remember where..

9 years ago | Likes 3 Dislikes 0

Those are tamales verde. The ones pictured are rojo. Completely different but equally as good. Every latin country has a twist on them.

9 years ago | Likes 1 Dislikes 1

probably where ever they grow a lot of bananas

In Spanish but process is universal https://youtu.be/ffqDMxdoBFo

9 years ago | Likes 2 Dislikes 0

Step One: A Whole Goddamn Familia.

9 years ago | Likes 11 Dislikes 0

Step 1: Find a Mexican. Step 2: become part of their family. Usually a long process. Step 3: Learn to make tamales next Christmas.

9 years ago | Likes 3 Dislikes 0

Or Thanksgiving. Haha

9 years ago | Likes 2 Dislikes 0

It's more like a process, it takes the whole familia. and every abuela and mamá have a different way of directing it.

9 years ago | Likes 2 Dislikes 0

Check out "sarmale", It's Romanian and looks sort of similar, not sure which one was the original.

9 years ago | Likes 2 Dislikes 0

The work is intense. Pork with red chile is good, but asadero cheese and green chile are amazing.

9 years ago | Likes 3 Dislikes 0

Be sure to spread masa on the shiny side of the husk, so it slides off in all of it's tasty glory. Also, always go with pork, for max flavor

9 years ago | Likes 3 Dislikes 0

It's waaaaay more than just a recipe it's a freaking process. Like my mom and grandma take a few days to make tamales.

9 years ago | Likes 35 Dislikes 1

Made some for a fundraiser. We made 600 in 12 hours. Never again.

9 years ago | Likes 1 Dislikes 0

We made 11 dozen and I took one night!! This is the daughter of the best mother-in-law in the universe!!

9 years ago | Likes 12 Dislikes 0

I need a recipe, please!

9 years ago | Likes 1 Dislikes 0

Do you prepare the Masa and cook the Molé all in one day? There's ways to skip steps but when my family does it we do it from scratch.

9 years ago | Likes 3 Dislikes 0

One night and multiple people. How long did the filling alone take to make?

9 years ago | Likes 5 Dislikes 0

Depends on the filling, but that's actually the easy part
