Refreshing on hot summer days is Tex Mex Siesta Prickly Pear Lager! Made with local Texan fruits and with what the Siesta brewery says is an extra boost of carbonation, it's a super satisfying bubbly way to quench a thirst!
Wine
If you can’t decide between wine or beer, why not have both? Delaware’s Dogfish Head brew, Noble Rot ferments the sugars from two types of wine grapes, creating a beer with a white wine body and a delightful tart finish. It's highly recommended served with shellfish or Gouda. Or Spam.

Yeasty Hornet's Abdomen (unclear what this is)
It hard to fathom, but some super smart fellow in Rome discovered that the yeast found in a hornet’s abdomen survives and is stored for long periods of time. The jump to beer is a mystery but the result is the golden Birra Calabrona made by New York City’s Eataly and Dogfish Head brewers. The beer has spicy notes of myrhh resin, “which produces a very rich, old world perfume.”
Banana Bread
British based Wells Young’s Brewing Company offers a light beer with flavors of subtle banana, hints of lemon, and peppery hops. It's a sweet dessert beer and can stand alone or wonderfully paired alongside a savory roast pork supper.

Chipotle (no relation with the authentic mex cuisine restaurant)
Roasted chipotle peppers in Rogue's Chipotle Ale produces a popping spicy chile flavor within a deep golden ale blend of malty, smoky aromas finished with a smooth, crisp flavor. The brew's recipe is dedicated to Spanish author Juan de la Cueva who, in 1575, wrote about a Mexican dish featuring seedless chipotles with beer.

Perhaps it's better to put the "journey" of this brew's main ingredient (coffee bean) out of your mind, but we know it can't be avoided so here it is: Mikkeller Beer Geek Brunch Weasel brew uses a coffee bean delicacy that involves it passing through the gut of the civet cat, after which it's cleaned, sun-dried and roasted. The result is a complex beer of carmel and dark chocolate flavors, with notes of smokiness, vanilla and subtle coffee.

I've tried the chipotle and voodoo doughnut when I was in Portland. Brilliant. Would add to the list Rogue's Beard Beer.

Every "weird" thing you pointed out about the Porters (Stouts) are fairly common practice other than bull testicles. But that's just wrong.

My next stout will be brewed with Cocoa Nibs, Lactose, a hint of honey, and a bit of strawberries for a little hint. Served on Nitro.
