A Ramen Experiment (a recipe... kinda)

You’ve probably seen a couple of my ramen posts here on imgur. Well, if you guessed it, this is a bowl of ramen made without using any meat.

Wow wow wow, don’t downvote it yet, it’s actually really good! And very cheap to make too! And instead of the 24 hours version I made earlier, this one takes 15 min, here’s how. You will only need 4 ingredients for the broth and you can find most of them very easily!

First step: boil a pot of water, add about 15 g of dried Porcini Mushroom and a 10cmx10cm piece of Kombu/Japanese dried seaweed., and cook for 10 min.

Why we do this: Ramen broth is all about that illusive umami, or glutamate, and both Kombu and porcini mushroom is full of it! By rehydrating them in boiling water, the flavor are extracted out the them. These replaces the need of using bonito or dried anchovy.

Then add a tbsp of this into the soup, this is NOT a branded post, however, I’ve tried many other soup base, even made my own, but this one is good. The reason why is that when they slowly simmer the stock into a paste, and as the acid and other stuff evaporates, the glutamate become thick and concentrated, providing a very good broth!

Then add a dash (2tbsp) of soy milk or cream, and you get that perfect creamy color!

Then add the cooked ramen, some sides like a braised tofu or fun mushrooms you can get at you Asian market, add some sweet creamed corn with scallion, a couple drops of sesame oil, you get a pretty great bowl of ramen!

Compare to a real 24 hours Tonkotsu/Ramen I made, this lacks the thickness & richness of the bone broth, but it not bad, a solid 8 out 10!

Ps. Some people were confused last time, Tonkotsu or 豚骨 is the bone broth of pig, where Tonkatsu is the fried pork cutlet
