Ingredients
3x 8 oz package of cream cheese, 4 tbs unsalted butter, 3 eggs, 2 tbs vanilla, 3 cups of sugar (rounding up), and a bag of frozen fruit whatevers you choose, I got blueberries, and a package of graham crackers.
THIS is what I mean by package of graham crackers.
The box of grahams usually has 3 of these.
Crush it.
You just want to break it up enough to fit in the food processor. If you don't have one, be careful not to blow a hole in the bag and crush it by hand.
Food processors make life easier.

The finer the better. If you have giant chunks of crackers your crust isn't going to stay together.
4 tbsp butter, 2 tbsp sugar
Add your sugar and then 4 tbsp melted butter. Mix it up really well.
Pound it.
This is a springform pan. If you don't have a springform pan don't panic. A 9 inch round cakepan is just as good, its just going to be harder to get the first delicious slice out of the pan. You can use a spoon to press the crust into the pan if you have that kind of time, I just use my hands.
Cream cheese
Make sure this is softened or you'll blow the motor on your cheap mixer. I beat the cream cheese with the mixer before adding other ingredients, seems to mix better that way.
1.5 cups sugar
Pour it on.
2 tbsp vanilla
There wasn't much left in that bottle, so I just dumped it in.
Eggs - PAY ATTENTION TO THIS PART
Add ONE egg. Mix thoroughly. Add ONE egg. Mix thoroughly. Add ONE egg. Mix thoroughly. That's right, add those eggs one at a time, mixing between each one. Don't over mix - it screws with the texture.
Pour it,
Stuff is thick. Pour it right onto that graham cracker crust.
Smooth it.
It will melt as it warms in the oven, but I smooth it out anyway in case something weird happens.
Bake it.
350 degrees for 30 minutes. After the 30 minutes you're going to check on it every 10 minutes. Take it out when the center is almost set. It kind of jiggles like jello. Let it cool on the counter while you make the topping.
Toppings!
These are frozen blueberries with about 3/4 cup of sugar. You can add more or less sugar depending on your taste. Warm that on low until the blueberries are somewhat thawed.
Syrup
After a while this beautiful juicy goodness will start to form, then you turn that up and boil it down until its the consistency you want.
Cool everything.
Let your blueberry syrup cool down a bit and then slap it onto that cheesecake. It tends to fall a slight bit in the middle, then the topping stays on.
Into the fridge.
Let it sit in the fridge at least an hour before you eat it. I made this for a work function, so I left the spring form on for easier transport.

I can never get my cheesecake to cook right. Will still be too gooey in the center, and too brown around the edges. Meh.
