Sure for big heavy compound lifts, like deadlift, squat or benchpress. But your wrist on cable bicep curls? You cant lift enough to hurt it.

That would be a Hammer Curl. The point he illustrates, is that you should not exceed 90 degree angle for that exercise.

As long as the elbow doesn't move I see no issue going past 90 degrees, I feel like he's not getting a full bicep contraction that way.

Shoulders are the easiest muscle to F up with modern exercises (technique and overuse). You want to check form for all those movements.

Keep the weight directly over the base(shoulder) for stability, your shoulders don't touch so neither should the weights.
