Is usually eaten alone, with fresh vegetables, toasted bread, fruit, balsamic vinegar or grated over pasta dishes.

The hard cheeses like parm usually have very little lactose, if at all. lactose is what the microorganisms consume in the cheesing process.

I am too, but I started drinking kefir, which is a liquid yogurt with probiotics to help digest lactose. It's been working great for me!

It's all about timing. Gently stir until you're hearts content then remove to your plate and add 1/4 extra Pasta to cut the cheese

Alcohol and fire. Also, you don't eat right out of the cheese. Clean pasta into cheese, clean pasta onto plate. Eat off plate.

You can buy a wheel at Kroger in Va. $800-1000 depending on weight. And while that's a decent one, it's also not high end.
