Two layer sushi cake for my boyfriend's birthday. Each "cake" layer is filled with spicy tuna, cucumber, and avocado. The entire cake was decorated with tobiko, thinly sliced cucumber, a tempura shrimp and veggies, salmon sashimi, tuna sashimi, and a rainbow roll.

The start of the layers. I lined my trusty six inch and four inch cake pans with cling wrap, and then used tobiko or cucumber around the edges and bottom.

I filled the bottoms and sides of the pans with rice and then started filling with spicy tuna, cucumber, and avocado.

Inside of the bottom layer. It ended up a little rice heavy, but it was still damn delicious.

I've never been a fan of fishcakes

Your bf is a lucky guy and you have a knack for presentation :). Though the rice/fish/veggie ratio is a little off here.

I have a question. Do you have to buy the fish in some special store? I want to make sushi and not die.

If you live inland and your only source of fresh fish is grocery stores, I wouldn't use that for sushi.

I always buy from a local seafood market that I trust. I'm sure if you talk to a fish monger they would be happy to help!
