dicing an onion is better if you slice towards center instead of the criss cross pattern. well its the same just easier and faster.

With Onions Have you ever noticed they are layered so you can make you cut vertically instead of horizontally and get the same results

You'll get chunky bits by the edges and the core. You can get good enough, but perfect takes an extra 3 seconds.

I usually keep my hand just on top so if I slip I just cut the onion. Also, sharp knife is key.

It kind of tears your steak apart which makes the cuts more 'stringy', I guess. The smoother the knife, the less this happens.

If it hasn't been properly rested, sawing your way through squeezes all those tasty juices out.

Generally speaking, resting reduces loss of moisture when cooking. However, a steak only needs to rest a few minutes, especially if rare.

I usually take serration to mean the knives aren't that sharp and require the sawing motion. Never used a serrated knife that felt as 1/2

Also in the UK, if you are a professional (not home) kitchen, you cannot use wooden chopping surfaces. They must be colour-coded plastic.

Mostly by applying a special mineral oil, also not allowing them to soak. Dry immediately!
