/2 fillings include mayo/salted salmon or tuna, umeboshi, mustard greens, bonito flakes with shoyu, karaage (fried chicken), etc.

The other easy way is to use plastic wrap and mold by hand. Otherwise I would suggest making the mold out of nonstick/wet aluminum foil
