It can be and usually is for a lot of guys, I used to have the same preference (5'8"here) but never called a guy short.

All she said was "I don't date short guys". She wasn't insulting him. She communicated her preference, then complimented him as a person.

Because some can interpret that as an insult. "I don't date stupid people." You are essentially calling the other person stupid.

That's because the word stupid is an insult. Even if you said "I love stupid people" it still doesn't sound good. It's a bad comparison.
