Also always play with controller number 4 that way you automatically get Toad for the races or Bowser for the battle stages.

Toad is the fastest so you win the races and Bowser the heaviest so you get to crash into others for balloon hits.

"power slide" jump while taking a corner. Works in every mario kart game since 64.
