Swiss Mac and Cheese

Found this recipe a while back and I love it! It's been a while since I put up a recipe so I figured this would do well. Mac and Cheese is awesome comfort food and this is a great twist on it.

You'll need

8 oz potato, peeled and diced into bite sized pieces
8 oz of pasta
unsalted butter
6 oz of semi-hard cheese grated, we used Emmental for ours
3/4 cup cream
2 tsp salt
2 tsp black pepper
2 tsp nutmeg
1/4 pound of bacon, cooked and diced

Bring a pot of water to boil and toss your potato pieces in, letting them cook for for about 3 minutes before adding the pasta. Cook until the pasta is al dente.

Grease a casserole dish with the unsalted butter and spoon in half of your pasta/potato mix, sprinkle half of your cheese mix on top, then spoon in the rest of the pasta/potato, sprinkle remaining cheese

Mix the salt, pepper, and nutmeg into the cream and pour it over the cheese/potato/pasta. Top with the bacon.

Bake at 425F for 15-20 minutes or until the top is browning, cheese is melted, and it's bubbling. Let stand a couple minutes and then serve!

This is a delicious take on mac and cheese that is very filling so don't take too much. You can try some other twists with the recipe like putting crispy fried onions on top with the bacon, using different cheeses for the different layers, or mixing it up with some sweet potato! If you want to serve it traditional though you'll want to serve it with a side of warm cinnamon spiced applesauce.

Any pasta is good pasta, I only used these spiral ones because my kids prefer them

I find mustard powder to be a nice addition to macaroni and cheese.

A friend suggested mixing a little whole grain dijon into the cream, I think I'll try that next time

Just plain old English mustard powder works a charm too. Or a dash of Worcestershire sauce.

I use ground mustard in my stovetop mac and cheese, it's awesome
