Stuff In Mixing Bowl

Ingredients for hollandaise.

4 yolks
1/8 tsp cayenne pepper
2 sticks butter cubed
Salt & pepper to taste
1/2 tsp lemon juice
1 tsp water
1/4 tsp sugar
Optional stuff
Whipping siphon
2 no2 charges

Whisk whisk whisk the yolks!

Put some water in the pot and whisk those yolks until they being to thicken up. Pull them off and put them back on as needed to avoid over cooking.

Mmmm Butter

Begin adding butter a little at a time and keep whisking.

Keep that shit up

Yeah. Keep going until all butter is added pulling off and putting back on heat to avoid over cooking.

Add more stuff

Add all the junk you haven't added yet and whisk it whisk it whisk it.

Add to whip

Add that sauce to the whip and charge it with the 2 no2 charges and stick it in the sous vide bath to keep warm while you cook the other stuff.

Bacon.

Duck fat for cooking the taters. Add that to the pan and get it nice and hot.

Shredded tuber

Season that stuff how ever you like it. I like roasted garlic, onion, chili powder, smoked paprika, etc.. And cook it til it Browns on one side.

Flip that shredded tuber

Once it's gotten a bit crispy on one side flip it so let it happen on the other side.

2 eggs 2 cups

When I poach eggs I like to pour them in the water from a cup. Seems easier to me.

Plate it up

Add a bed of that delicious duck fat shredded tuber, take your eggs and add them, then add a bit of the dead pig, and finally top with the hollandaise foam.

Eat

Enjoy.

No I pour the eggs from the cup into a pot w/boiling water. Easier for me to pour like that. I cook until they are done (not sure on time)

I do mine in the microwave. 1/2 cup of water in a bowl. 1 egg into it. 1:45 in the microwave at 60% with a plate on top of the bowl.

"1 egg into it." means, crack one egg into the water. Don't try to boil a whole egg in the microwave.
