Funny thing, I like food that is 73% fat and very salty very much.

Did you know there's this amazing thing called Shoulder Bacon (also known as extra lean bacon), that is just as salty and tasty but more meaty and less fatty. It is incredibly difficult to find. I only find it in old school butcher shops. Some meat markets will special order it for you, but they won't carry it. Anyways it's more bacon meat, less fat, but with the same taste.
