Do the fat tires make a difference in ride quality? I've only ever had skinny tires

Good on soft stuff like snow or sand but in general more grip and plush riding, can be a bit weird cornering at speed

They are also a fair bit heavier so take some extra effort to get up to speed, or back down to a stop.
