Looks delicious, i've only recently discovered the deliciousness that is curry. I'll have to give this a shot. if I can learn to cook rice.

I made a chunky lentil soup from that broke student's cooking guide post last month. It was delicious, huge fan of lentils.

2:1 ratio of rice to water. Bring water to boil, add rice, reduce to simmer, & cover. Then resist the urge to open the lid ever 5 minutes.

Maybe it's that last part, I always want to check on it / stir, but the rest is always what I've done.

Just give it 15-20 minutes and then check it, but don't stir. Just look to see if there's any water left in the pan. If not, it's done.
