Deus Ex is one of the earliest (and best) "immersive sim" games, giving players the freedom to choose how to complete different objectives and encouraging them to explore and experiment.
This video review by Grimbeard does a great job of covering the development history, story, gameplay, and more, plus puts Deus Ex into historical context. It's quite a lengthy video (2 hours) and contains a clearly delineated spoiler section, but it's well worth a watch if you're interested, IMHO:

I've only used the widescreen patch, but there are a few custom renderers here: https://www.pcgamingwiki.com/wiki/Deus_Ex#Custom_Renderer
