Do they still do printed manuals like this? I have a paperback Haynes for my BMW E61, but she'll be 15 this year.

Chilton's was always marginal as was Haynes. Just when you needed some detailed procedure, they'd toss something like "complete the removal of the dash panel to access the heater core fasteners".
You can still work on your car. You just might need an upscale computer device for some. The Chinese clone most of them.
