Cheese Curd Jucy Lucy, Sweet Potato Poutine

The patty

Ground chuck, egg yolk, fines herbs, mustard, sriracha.

Shape half of it into a patty, make a divot, stuff it with jalapeno cheese curds, and put the other half on top.

Cook it in a pan...

and toast the bun in the pan grease.

Sweet potato poutine.

Boil up some fries, dry them...

fry them. (twice)

Make a roux...

add some duck stock for a gravy.

Finished Plate

Toss some chipotle cheese curds in with the fries and plate it up.
