What you want is something called "duros wheat". It's sold on various billionaire owned online retailers as well as most Mexican grocery stores, I recommend the latter. They come in a variety of shapes, mostly twists and wheels. Taco Bell uses twists for their cinnamon twists, obviously.
Just pour some cooking oil into a small frying pan heat it to about 350 degrees (175 Celsius, but if you're using Celsius you might find duros wheat to be hard to find), then throw a few of the twists in and watch them expand like magic. Pull them out IMMEDIATELY and top with cinnamon sugar, or serve plain with a side of hot sauce. I don't have any hot sauce so I went with hot honey... not a good choice in my opinion but your results may vary. A good hot sauce to use though is Valentina's.
Other terms to look for to make sure you have the right thing is "Fritura De Tornillo" or "Chicharrones De Harina"
