Sharpening stones are better, they don't remove as much material from the blade but take a bit of practice and time.

Inexpensive is okay, but never cheap. There is a world of difference when it comes to knives. Mercer is a decent inexpensive brand.

Shitty knives work just as well as long as you have a good sharpener. I turned an old shoehorn into a knife and it was my favorite blade.
