Cheap offset, but it'll do for now

Oak fires only

Just thrown on the grate

One hour and mop

Another hour and mopped again

Wrapped in foil, sauced, and 45 minutes later

Make sure they rest before cutting!

GF made potatoes. Meat is supposed to have sides... Apparently.

With the offset smoke box, is it easy to maintain a temp in the cooking area? Say around 225 to 250f?

You'll normally get one side hotter than the other. This brand welds a baffle in there to deflect some heat. You can also buy or make 1/2

Tuning plates. Managing temp is no problem though as long as you manage your fire 2/2

New to smokers that use wood as the only fuel source, tried to keep it between 260 and 280. Past experience with charcoal and wood I get 1/2

A better bark above 250. For something that cooks much longer like a brisket I'd do 250. 2/2

I'll throw in some cherry or pecan chunks sometimes but my main fuel source will be oak. Ribs I keep it simple, first mix pepper and salt...

2:1 with pepper being the dominant one there, then a decent amount of paprika for color, a little brown sugar, and a dash of chili powder

If anyone else reads this, do NOT use oil drums. Use food-grade drums, like ones used for bananas, nuts, etc. Buy at local ranch supply(1/2)
