Helps to have cherry/olive pitter. When my kids were younger, they'd enjoy pitting for me outside (who cares abt errant pits and juice there
It was fun for them because it kind of shoots out. Plus often good to get kids involved with preparing food prior to cooking or baking.

The last time I went cherry picking with my parents: my dad specifically picked cherries with no stem for pie or wine making. 1/2
I specifically picked with stem for longer shelf life. Guess which two partial boxes my mom decided needed to be combined....

A drinking straw works great. Pitted 100 cherries in about 20 minutes with one.

Those are tart cherries, which go better in baked things like pie. They're sour right off the tree, but good; some call em sour cherries.
