Puting the last clamp on bare metal (away from the battery) avoids any explosive hydrogen fumes that old batteries can leak.

By itself, no. Typical car batteries are 12 volts. An AED typically runs to 3000 volts for a very quick burst (1ms). Any more questions?

Then you didn’t do it right. The frame goes to the neg terminal. That’s how DC power works. Frame is just more inline resistance.

Sometimes the negative wire is so corroded the frame makes a better connection to start, and then it kinda works when the battery is charged

The frame connects to the neg battery terminal. The entire metal frame of the car is ground.

If the dead car is properly wired, it should draw the same current either way. The only reason it wouldn't is if it isn't properly grounded.

There's a difference between jump starting and charging. Jump starting only requires getting enough current to turn the engine.
