I've found that if you keep crayfish for a while, they tend to turn blue after a molt (at least with local water from my last 3 residences).

Oh really? The ones I've captured were from a fairly small lake in the middle of some nature trail. They varied from red to a splotchy black

All of my kept crayfish started off as either mottled brown or red/black/brown. It's always a shock when they come out blue one day.

I've kept local species and always rescue one from the crayfish boils. Most of them have done it. I assume it's water quality/minerals.
