No, it's a general technique for making cider (and I would guess other similar things. You put your juice in an open bucket without lid. The fermentation starts and the aggressive bubbeling creates this brown hat. When the brown hat starts to dry and crack (about two weeks) you tap the cider-to-be into another bucket or demijohn or similar, leaving the fallout in the bottom of the bucket and the brown hat behind. This new container you put a lid and a bubbler on and leave it to do its thing
