Our local prison opened a cafe on site to the public where the inmates make and serve all the food.
Clever name.
Located in northern Utah at a women's federal prison
Serving Time Cafe located right on prison property
Cafe is frequented by both the public and correctional officers on site.
Ironically titled menu. Fairly inexpensive pricing.
Inmates take the orders and make all the food. Everything is out in the open so you can see them make the food. They consistently do a terrific job.
The food is very delicious!

They are paid a higher wage than most other positions offered at the prison, but it's very cheap labor. It's a very good job in comparison.

We use inmate labor in the jail kitchen where I work. They don't get paid diddly, but they get furloughs and extra food and stuff.

There are programs set up for some inmates. Hobby Craft (making... stuff. Rocking chairs, chests, etc.), gardening, etc., then sell it.
