I was once a helping hand for a chef in outdoor kitchen, where he had to feed ~120 ppl for 5 days in outdoor conditions, ie campfire in plain field. He had to quickly organize his workplace with various contraptions, set everything up, organize around EVERYTHING and then tear it down after 5.days. I was amazed how cooking was different from plate-portion, how much planning was involved in that. It was outdoor festival
