I did it for two years and didn't think it was that hard, just tiring after a while.
Room temps in Celsius mean nothing to me. Refer to OP.
I'm likewise with celsius even after years of living with it. I cooked for years with it, and the only time I like using it is steak temps.

Problem is that's expensive, no windows, and you have to deal with ventilation.

We're just losing the advantages we had in the 20th century and have increasing wealth inequality.
