but I don't understand how this doesn't work w/ monetary things. If somebody overpays you, or under charges you then they can legally come after you for payments even years later. Examples include employee payments, bank "errors", and similar financial stuff.

If you're just looking for something for show for the proposal then goodwill tends to have a few rings that are nice enough, and should run under $100. A pawnshop will tend to have a few nicer things for a bit more (under $500). Jewelry shops will have rings over $500 that will be contemporary and most expensive looking. You might get lucky at goodwill, or a pawnshop w/ something that just needs polish, and cleaning.
